2. Make the apple filling:

In a large bowl, toss the sliced apples with sugars, cinnamon, nutmeg, lemon juice, and cornstarch. Pour into your prepared baking dish and dot the top with butter.

3. Make the biscuit topping:

In a separate bowl, whisk together the dry ingredients. Cut in the cold butter with a pastry cutter or your fingers until it looks like coarse crumbs. Stir in the cold buttermilk just until combined—don’t overmix.

4. Assemble the cobbler:
